Pulled Pork

Ingredients: 1kg pork shoulder or pork collar, pink salt, 3-5 slices of bacon, 5 garlic cloves, 1-2 tablespoons of paprika (if you want it spicy), 1-2 tablespoons of apple cider vinegar

Pre-heat oven to 170C.

Line a large dutch oven with bacon slices. Place the pork shoulder or collar in the dutch oven. Rub salt, paprika and garlic all over the pork.

Cook with lid on and in low heat for at least 8 to 16 hours, or until the pork is tender and can be pulled apart really easily.

Make sure to check on the meat every hour or two so it does not dry out. If it gets too dry, turn down the heat and add a little bone broth or vegetable stock or apple cider vinegar.

Serve hot or cold with mayonnaise in burger, wrap, sweet potato fries or salad or coleslaw.
